Every bean that runs through the Faustino touches these two discs first. 50 mm in diameter, matched to one another, made by Eureka for the Faustino's grinder — the point where the whole bean becomes the grounds that later sit in the basket.
After many kilograms of ground coffee, the sharpness of the edges changes. The grounds become fine dust instead of even particles, extraction grows less consistent, and the grind setting needs constant readjusting to keep the same result. A new burr set brings the cutting edges back to factory level.
